Peel and slice the garlic cloves and the ginger.
We cut the peppers, carrots and zucchini into strips of the same thickness.
We cut the leek into diagonal slices.
We cut the tofu into cubes of approximately 2x2 cm.
In a wok over medium-high heat, add the sesame oil and stir-fry the garlic and ginger, so that the oil becomes well infused with the aroma.
Add the leek slices, then the peppers, carrots, and zucchini. Sauté everything well.
Next, we add the corn cobs, tofu, and soy.
Finally, we add the sauces and wait a few seconds for them to reduce.
FINISHED DISH:
In the center of a platter or white plate, place our Sautéed Vegetables with Tofu and Purple Garlic. Arrange them so that the dish has some volume upwards and is nicely presented.
We add a little of the sauce that we reduced in the Wok on top.

It's important to stir-fry the vegetables until they are al dente, practically retaining their natural color. The wok technique allows vegetables to cook in a very short time, preserving all their nutrients and original flavors.
