Easy
Peel 2 cloves of garlic and cut them in half. Separately, crush the other 2 cloves of garlic, without peeling them.
We cut off the stem of the spring onion, split it in half and cut it into julienne strips, that is, into very thin strips.
We cut the cheese into cubes, more or less equal, about a finger thick.
We cut the baguette in half.
In a non-stick frying pan, over medium heat, add a splash of oil and, when it is hot, add the crushed garlic cloves.
We brown the bread on both sides and remove it from the heat to begin plating. We reserve the oil from the pan for later.
FINISHED DISH:
We'll start by rubbing the raw garlic on the bread. We'll add a base of arugula and some cubes of fresh cheese.
On top of that, we will place some slices of Serrano ham and some cilantro leaves.
We will scatter the spring onion strips and sunflower seeds.
We pour in a little oil and add fleur de sel.
Ready to enjoy!

Miguel Ángel Mateos:
This toast is perfect for breakfast or an afternoon snack, served with orange and pomegranate juice. The combination provides a fresh, easy-to-digest, and cleansing dish.
– We can replace Serrano ham with turkey, cooked ham or Iberian ham, depending on our taste.
– If we replace the fresh cheese with goat cheese, we will enhance the flavor of the toast, adding stronger nuances to our dish.
