Peel the garlic cloves and chop them finely. Place them in a bowl and set aside.
We slice the gherkin lengthwise, then into strips and finally chop it into fine squares, as fine as possible.
We do the same with the capers and the onion (previously peeled) and set aside.
We chop the meat into small, even cubes, removing fat, sinew, and dry parts, so that it is as juicy as possible.
In a deep plate or bowl, we add the solid ingredients and then the liquids.
That is, the chopped garlic, the gherkins, the capers, the spring onion, the meat, ground pepper to taste, fine salt, Worcestershire sauce, Tabasco, and we mix the whole thing well.
We finished by placing the free-range egg yolk on top.
We could then present the dish, and it would be finished, just in time for the diner to break the yolk and mix everything together to their liking.

It's a classic international dish that we've given a twist by adding fresh, finely chopped white garlic. The final flavor is truly surprising and delightful.

– The solid ingredients must be finely chopped, as fine as possible, except for the sirloin, which must be cut evenly and without sinew or fat, as this would harm the final result.
