Shimeji mushrooms with purple garlic cream

Ingredients
  • 3 cloves of Purple Garlic
  • 200 grams of Bunapi Shimeji mushrooms (white)
  • 200 gr de Seta Buna Shimeji (marrones)
  • 100 grams of wild asparagus
  • 50 grams of shelled walnuts
  • 150 ml of cooking cream
  • 100 gr de Tomate Frito
  • Fresh Dill
  • Extra Virgin Olive Oil
  • Salt flower
Step by step
  1. We peel the 3 cloves of Purple Garlic and slice them thinly.

  2. We wash the asparagus and slice it at an angle, so that it looks nicer and stands out more on the plate.

  3. We remove the back part of the mushroom stem and wash them.

  4. We chop the walnuts, but not too much so that they are noticeable when biting.

  5. In a non-stick frying pan over medium heat, add a drizzle of oil and add the garlic, asparagus, and mushrooms.

  6. Sauté for 5 minutes, add a pinch of salt and remove from the pan.

  7. In the same pan, pour in the cream, walnuts, and a pinch of salt. Let it thicken slightly and remove from the heat.

  8. We heat the fried tomato sauce.

  9. FINISHED DISH:

    On a flat plate, place a heaped spoonful of sauce and, around it, 3 teaspoons of fried tomato.

  10. On top of the sauce, add the sautéed mushrooms, sprinkle with fleur de sel and garnish with a sprig of dill.

– We recommend that you try adding different textures to the dish such as crispy onions, sesame seeds, or other nuts sprinkled over the mushrooms.
