Hi everyone, we've reinvented the classic baby eels with garlic and the result is a truly deluxe dish! The Burrata cheese adds a creamy texture and makes it even more delicious. Our mouths are watering just thinking about it.

Easy
Peel the garlic cloves and slice them thinly.
We cut the onion into Brunoise, that is, into small dice.
We do the same with the red pepper.
In a non-stick frying pan over medium heat, pour a splash of oil and, once hot, add the sliced garlic.
Sauté for a few minutes and then add the onion and pepper.
Add a pinch of salt and sauté until everything is softened.
Add the baby eels and sauté for a few minutes to allow the flavors to blend. Remove from heat.
FINISHED DISH:
On a flat plate, place a square or round mold and fill it with the sautéed baby eels. Gently press the mixture to maintain its shape and remove the mold.
On top of that, we place the Burrata, pour a little oil and a pinch of salt, and open the cheese in half.

_Miguel Ángel Mateos:
– We can add some chopped fresh cilantro or chives to add freshness to the dish.
– If you cannot find Burrata cheese, you can substitute Mozzarella, as they have a similar texture and flavor.
