Easy
We peel the cloves of white garlic and place them inside a blender cup.
Add the chopped cucumber, raspberries, halved and pitted cherries, and stemless currants.
We chop the tomatoes and add them to the blender.
We blend gently until it becomes a cream, and then increase the speed of the blender to make our gazpacho nice and smooth.
We add a pinch of salt, the oil and the vinegar and give it a quick beat with the blender to mix everything well.
If necessary, we pass it through a fine sieve to make it as smooth as possible, without lumps.
FINISHED DISH:
With the help of a spoon inside a glass or a pitcher, we pour the gazpacho into the glass, tapping the spoon gently so that it does not splash against the walls of the glass and stain it.
We place it on a colored plate and accompany it with some of the ingredients used in dice, as a garnish for our red fruit gazpacho.
