Spaghetti with Broccoli and Purple Garlic Couscous.

Ingredients
  • 4 cloves of Purple Garlic
  • 50 grams of cantharellus mushrooms (wild baby eels), dehydrated.
  • 2 Tomatoes
  • 4 Green asparagus
  • 600 grams of fresh egg pasta (spaghetti, macaroni…)
  • 1 broccoli
  • Sal
  • Extra Virgin Olive Oil
Step by step
  1. First of all, we peel the purple garlic cloves and chop them.

  2. We continue with the green asparagus, chopping it into thin slices, but not too thin.

  3. We also dice the seedless tomato into roughly the same size pieces and set it aside.

  4. On a plate, finely chop only the outer part of the broccoli with a paring knife. Small balls of broccoli will fall out, like couscous. Set them aside.

  5. We put a saucepan of water with a little salt on to boil. Once it's boiling, we add the pasta and stir it lightly so it doesn't stick together. Depending on the type of pasta, we'll cook it for 3 to 5 minutes.

  6. When the pasta is ready, remove it and drain it in a colander, removing all the water.

  7. In a sauté pan (or special pan for sautéing), add a splash of extra virgin olive oil and when it is warm, add the chopped garlic and green asparagus.

    We sauté them and add the hot chopped tomato. We let it cook for a couple of minutes and then add the dried mushrooms and let them rehydrate for a few seconds in the mixture. We season it and pour in the well-drained pasta.

    We stir-fry everything so that it absorbs the flavor of the mixture and remove it from the heat.

  8. FINISHED DISH:

    On a plate of your choice, arrange the pasta in a mound, gathering it in the center to give it volume and height, and ensuring it falls easily from the chopped vegetables. Finally, before serving, add the broccoli couscous and serve the dish hot.

The advice of

– Since the pasta is hot and the broccoli is so small, it will finish cooking just from the heat of the pasta itself, retaining all the flavor of the broccoli and a very pleasant texture.
The fact that the mushrooms are dehydrated allows us to enjoy them year-round, as they keep perfectly and don't spoil. We can use them as salt or as a seasoning.
– If we use fresh pasta, the dish will be much better than if we use dried pasta.
– If we want to give the dish more flavor and creaminess, just when we have finished sautéing the pasta, off the heat, we add a free-range egg yolk and stir well together with the pasta.
– Good fresh pasta, simply with a good sauté of chopped garlic, some fresh sage or basil leaves and a drizzle of extra virgin olive oil, is pure delight.
