  • 600 grams of artichokes cooked in olive oil
  • 100 grams of cooked octopus
  • 20 grams of flour
  • ½ glass of water
  • Romero

Step by step
  1. We peel the garlic cloves and cut them into small squares, that is, first we slice them, cut them into strips and then these into squares.

  2. We cut the octopus into slices.

  3. In a frying pan over medium heat, add a generous drizzle of olive oil, add the chopped garlic and wait until it starts to brown.

  4. Add the flour and stir well until it blends with the oil.

  5. At that point, we add ½ cup of water and continue stirring until we obtain a sauce that is smooth but not too thick.

  6. Add the octopus and artichokes, lower the heat and let it cook for a few minutes, so that the flavors blend.

  7. FINISHED DISH:

    To present this recipe we will use a square mold, which we will place in the center of a flat plate and a square mold.

  8. In the mold we will place the artichokes and the octopus along with its sauce, press lightly with the help of a spoon and carefully remove the mold.

  9. We'll finish by decorating with a sprig of rosemary.

When artichokes are in season, we can use them to make this dish, as they will greatly enhance its flavor. However, cooked artichokes are a great option for preparing this recipe year-round, and they're quicker to make.
– We can enhance the flavor of the dish by adding small cubes of ham, cured beef, etc. to the garlic sauté.
– In addition to octopus, we can add clams, cockles or mussels to enhance the seafood flavor of this dish.
