  • 4 Spring Violet garlic cloves
  • 320 grams of Wheat
  • 100 grams of mushrooms
  • 100 gr of Tirabeques

  • Fresh Parsley
  • Extra Virgin Olive Oil

Step by step
  1. We peel the Spring Violet Garlic cloves and chop them finely.

  2. We wash the mushrooms and slice them thinly. Then, we'll leave a few slices uncooked to use for decoration.

  3. We peel the carrots and cut them into small squares.

  4. We chop the spring onion as finely as possible.

  5. We remove the ends of the snow peas, wash them and cut them.

  6. In a non-stick frying pan, over medium heat, pour a drizzle of oil and add the chopped garlic and sauté for a few minutes.

  7. Add the onion, wait a few seconds and add the rest of the vegetables.

  8. Stir the mixture well and add the wheat. Sauté again to allow the flavors to meld.

  9. Add the water, season and leave until the wheat absorbs the broth.

  10. FINISHED DISH:

On a flat plate we place our sautéed wheat with the vegetables, add some slices of raw mushroom and decorate with a few sprigs of parsley.

_Miguel Ángel Mateos:

Wheat is a grain that we don't usually use in our country, but it's a good substitute for rice. It cooks in about 10 minutes.

– If instead of water we add vegetable broth, we will enhance the flavor of our dish.

– In this case we have cooked it as a main course, but we can use it as a side dish for meat or fish.

Don't miss a thing!
