Fresh Pasta with Garlic Spring Violet

Ingredients
  • 4 Spring Violet Garlic Cloves
  • 4 Tender Garlic
  • 400 grams of Fresh Pasta
  • 3 Dried Cayenne Peppers
  • Fresh Thyme and Oregano
  • Extra Virgin Olive Oil
  • Flower of Salt
  • Sal
Step by step
  1. We peel the Spring Violet Garlic cloves and chop them finely.

  2. We clean the first leaves of the young garlic, remove the roots and chop them finely.

  3. Bring a pot of water to a boil and season with salt. Once boiling, add the pasta and cook for 3-4 minutes, or until al dente. Drain the pasta.

  4. In a frying pan over medium heat, pour a splash of oil and add the garlic, tender garlic, and cayenne peppers.

  5. We leave it for a few minutes until it starts to take on color, stirring so that it doesn't stick, and then we add the fresh herbs and pasta.

  6. Let's stir-fry lightly so that all the flavors are infused and then remove from heat.

  7. FINISHED DISH:

    We will present our dish on a plate, garnishing it with fresh sprigs of thyme. We will season it with fleur de sel and a drizzle of olive oil.

– It is a very quick and easy dish to make, with a great flavor boost thanks to the aromatic herbs and garlic.

– Depending on whether we like it more or less spicy, we can add or remove the amount of cayenne pepper:

  • If we don't like spicy food, we'll just sauté the cayenne pepper with the oil and remove it.
  • If we want it to have a spicier flavor, we can cut the cayenne peppers in half before putting them in the pan. This way they will release more flavor.
