Ingredients
  • 2 cloves of Purple Garlic
  • 8 Free Range Eggs
  • 50 gr Fresh Salicornia
  • Nice room
  • Extra Virgin Olive Oil
Step by step
  1. We peel the cloves of Purple Garlic and slice them thinly.

  2. We're going to make individual omelets, so we'll use 2 eggs for each one. In a bowl, crack 2 eggs, add a pinch of salt, and beat them lightly.

  3. In a frying pan over medium-high heat, pour a drizzle of oil and, when it's hot, add the garlic and brown it lightly. Set it aside.

  4. In a small frying pan over medium-low heat, to make the tortilla nice and thick, add a little oil and a few slices of golden garlic.

  5. We add a few sprigs of Salicornia and sauté.

  6. Pour in the eggs and let it cook. After a few minutes, flip the omelet. Remove it from the heat when it's slightly set, so it stays juicy inside.

  7. FINISHED DISH:

    In the center of a flat plate, we place the tortilla.

  8. We decorate with some slices of golden garlic and some sprigs of samphire, either raw or sautéed.

The advice of

– Salicornia is a fleshy plant also known as sea asparagus, due to its salty flavor. Therefore, it's not advisable to add much more salt to the dish.
– We can substitute the salicornia with asparagus, young garlic,… according to each person's taste.
– We must beat the eggs just before adding them to the pan, otherwise they will become too runny and we will not achieve a fluffy tortilla.
– Free-range eggs will add more color and flavor to our dish, so we recommend using them.
