Gazpacho with Red Fruits and White Garlic.

Here's another version of gazpacho. A delicious, refreshing, and nutritious cold soup for this summer. 😉

Ingredients
  • 1 White Garlic Clove Cook' In Big
  • 400 grams of ripe, seasonal tomatoes
  • 10 grams of raspberries
  • 5 grams of currants
  • 10 grams of pitted cherries
  • 50 grams of peeled cucumber
  • 10 grams of Extra Virgin Olive Oil
  • 5 grams of Sherry Vinegar
  • Nice room
Step by step
  1. We peel the cloves of white garlic and place them inside a blender cup.

  2. Add the chopped cucumber, raspberries, halved and pitted cherries, and stemless currants.

  3. We chop the tomatoes and add them to the blender.

  4. We blend gently until it becomes a cream, and then increase the speed of the blender to make our gazpacho nice and smooth.

  5. We add a pinch of salt, the oil and the vinegar and give it a quick beat with the blender to mix everything well.

  6. If necessary, we pass it through a fine sieve to make it as smooth as possible, without lumps.

  7. FINISHED DISH:

    With the help of a spoon inside a glass or a pitcher, we pour the gazpacho into the glass, tapping the spoon gently so that it does not splash against the walls of the glass and stain it.

  8. We place it on a colored plate and accompany it with some of the ingredients used in dice, as a garnish for our red fruit gazpacho.

The advice of

  • The tomatoes used should be in season and at their optimal point of ripeness, in order to have a quality gazpacho.
  • If we like one red fruit more than another, we just have to increase the amount of that product.
  • It is very important that it has no lumps, that it is well crushed and passed through a fine sieve.
  • The sherry vinegar gives it a very peculiar flavor, enhancing the taste of this cold soup.
  • The best thing to do is to make it and leave it in the fridge in a pitcher overnight and stir it well before enjoying this refreshing and nutritious summer drink.
