Easy
We peel the cloves of black garlic and chop them as finely as possible or, if we want, we can finely crush them until we obtain a black garlic paste.
Then, with a sharp knife, we portioned 90 grams of tuna per person, into three pieces and set aside.
In a bowl, place the black garlic and add the finely chopped ginger slices, teriyaki sauce, soy sauce, rice vinegar, wasabi mayonnaise, and sesame oil.
Stir everything well until you get a smooth sauce.
We put the tuna tacos in the sauce for 5 minutes, then turn them over and leave them for another 5 minutes (this way, we will properly marinate the tuna).
Meanwhile, slice the fresh spring onions diagonally and sauté them lightly in a pan with a drizzle of extra virgin olive oil. They should retain their vibrant color and have an al dente texture.
FINISHED DISH:
On a flat, white plate, we placed a line of sesame seeds (as you can see in the plating photograph), and perpendicular to the sesame line, we placed 3 pieces of tuna, one after the other but without touching.
On each tuna steak, we add the marinade sauce, and on each piece, a little sautéed fresh garlic. We make sure that all the steaks have a good amount of black garlic in the marinade, as the flavor is truly delicious.

– We'll use the marinade to coat the tuna like a sauce. It's important to stir it well before adding the sauce so it blends together and doesn't separate.
– Whenever we work with soy, we must be very careful, as it is very strong and greatly increases the salt content of food.
– The tuna chunks can be seared in a very hot pan for a few seconds on all sides. In this case, since they are so small and such high-quality pieces, the marinade alone is enough to fully appreciate the tuna's flavor and texture.
