We peel the cloves of Black Garlic and set them aside.
We hydrate the seaweed in water for 5 minutes and drain it. Then we put it in boiling salted water for 3 minutes, drain it and set it aside.
We clean the razor clams, removing the intestines and keeping only the meat. We finely dice some of them.
In a bowl, combine 1 part rice vinegar with 3 parts olive oil, a pinch of salt, and the chopped razor clams, and mix well.
FINISHED DISH:
On a flat plate, arrange the razor clams in a star shape, without them touching each other, leaving a circle in the center of the plate.
Between each razor clam, we will alternately place a clove of black garlic and a teaspoon of chopped razor clams.
In the space we have left in the center of the plate we place the seaweed and dress it with the vinaigrette of the chopped razor clams.

– This is a very flavorful dish and very easy to make, as it is made from a can of preserves.
– If we prefer, we can use fresh razor clams instead of canned ones, searing them gently on a griddle so that they don't lose their juiciness.
– It's best to always remove the black part of the razor clam, that way we avoid finding dirt when we're eating it.
