White asparagus, roasted garlic and Gorgonzola cheese

Hello! Here's a very simple dish to prepare, but full of flavor, which we can adapt to the season using the best Mediterranean ingredients. Enjoy! 🙂

Ingredients
  • 4 Big Garlic white garlic cloves
  • 8 fine asparagus per person
  • 50 grams of Gorgonzola cheese
  • 200 ml Liquid cooking cream
  • Salt (to taste)
  • Ground black pepper
  • Extra Virgin Olive Oil
  • Fresh cilantro leaves
Step by step
  1. We peel the asparagus and cook them in boiling water with a little salt and sugar.

    We leave them until they are tender, but still firm, and then set them aside.

  2. We placed the garlic cloves on aluminum foil with a drizzle of oil and 3 cilantro leaves.

    We seal them well and bake at 180ºC for 15 minutes, until soft.

  3. For the sauce:

    We remove the paper, crush the garlic well and place it in a saucepan over medium heat along with the oil remaining in the aluminum foil, the cream and half of the Gorgonzola.

    We leave it until the cheese melts and it takes on a sauce-like texture.

  4. We ration the asparagus, separating the tips on one side and the stalks lying down and standing up on the other.

    We cut small portions of Gorgonzola and arrange them in a deep plate.

  5. FINISHED DISH:

    Once everything is arranged in the deep plate, with the cheese cubes and 3 cilantro leaves, we pour our roasted garlic and Gorgonzola sauce over it.

  • We can complement the dish with green asparagus or other vegetables (depending on the season), and with other cheeses.
  • A good finishing touch to enhance the flavor and add a hint of freshness is to grate a little lime zest on top of the dish.
  • If we don't have white asparagus, a good solution is to use canned asparagus.
  • To make the sauce smooth, we can use white garlic and also the Spring Blanco variety of garlic.
