Easy
We peel the cloves of Black Garlic and set them aside.
We peel the cucumber and cut it into small squares, more or less the same size.
We do the same with avocados.
We squeeze the juice from the lime. In a small bowl, we add one part lime juice to three parts olive oil and a pinch of salt, stirring until fully combined.
We cut the cleaned salmon loin into small cubes, as we have done with the other ingredients.
We place the salmon in a bowl and add the rice vinegar, along with a little sugar, and let it rest for about 10 minutes.
We lightly break the hazelnuts with our hands, or with the help of a knife.
FINISHED DISH:
To serve: In a bowl, place the lettuce sprouts and add our lime vinaigrette. Stir well and place a small mound in the center of each plate.
On the outside of the plates, we place a spoonful of avocado, next to it another of salmon, and then one of cucumber, until we close the circle.
On the plate, we sprinkle the hazelnuts and dress with the remaining lime vinaigrette.
We grate a little lime zest on top and add the Fleur de Sel.
We place the cloves of black garlic around the edge and our dish is ready!

– This time we've opted for fresh salmon, but we can also use smoked salmon. Which
It goes very well with fresh chopped chives and a little dill.
– To soften the flavor and bitterness of the cucumber, we can leave it covered with salt for 10 minutes and then
Wash it with water.
– To prevent the avocado from oxidizing, and to avoid using the lemon trick which always leaves some of its flavor,
We can cut it and then store it in its own rind along with the bone.
