Here's a very easy and delicious appetizer tapa. You can complement it in countless ways. How do you like it best?

Easy
We cut the head of garlic in half, place it in an ovenproof container, and add a drizzle of extra virgin olive oil.
We put them in the oven at 160 gr, for about 8 minutes, until they are soft.
We let it cool, then peel the garlic cloves and place them in a bowl to make a puree by crushing the cloves with a fork.
Add the eggs, beat them and mix with a pinch of salt, with the flour and beat until there are no lumps.
To that same mixture we also add the yeast, the chopped parsley and the food coloring and beat with a whisk until there are no lumps.
We let the dough rest and the yeast work for about 20 minutes, covered.
After this time, we heat the fryer and add spoonfuls of the mixture one by one to the hot oil.
We take the fritters out of the fryer and place them on a plate lined with absorbent paper.

FINISHED DISH:
9. On a plate of your choice, place our fritters neatly and decorate with a little fresh parsley.
– We can complement this recipe with an ingredient to accompany the garlic, such as cod, spinach, mushrooms… First, we would confit or sauté these ingredients and then roughly chop them to add to the batter later. In the case of cod, remove the bones and skin.
– Our Big Garlic fritters go perfectly with a light aioli, an Idiazabal cheese cream, or a tomato jam.
– It's a very easy recipe that works well as a starter or appetizer.
