Hi! Here's a perfect recipe for Good Friday, as it's meat-free. We're making a Cod Scramble with Spring Violet Garlic—one of those recipes we love: easy, quick, and delicious!

Easy
We peel the 4 cloves of Spring Violet Garlic and slice them thinly.
We cut the chili pepper into thin slices.
We remove the seeds from the green pepper and cut it into small squares.
We cut the desalted cod into small cubes.
In a non-stick frying pan over medium heat, pour a splash of oil and add the garlic and chili pepper.
Sauté for a few minutes and add the green pepper. When it starts to soften, add the cod and cook for 5 minutes.
Add the eggs and, when the white starts to set, stir well.
We pour in the cream, stir and adjust the salt.
FINISHED DISH:
On a flat plate, using a circular mold, place the scrambled eggs and gently press down with a spoon so that the scrambled eggs retain their shape once the mold is removed.
We decorate with fresh dill and a few slices of chili pepper.

– We can enrich our preparation with onion or red pepper, all chopped and sautéed.
– When cooking with desalted cod, we must be careful with the salt, as it will always have a saltier taste than fresh cod.
