Easter is approaching, and at this time of year we love preparing simple yet delicious recipes as a family, where the little ones can help. We suggest some savory pumpkin fritters with a touch of chestnut garlic and served with a yogurt sauce. Who's up for some?

Easy
We peel the clove of chestnut garlic.
We peel the pumpkin, remove the seeds and cut it into cubes, approximately one finger thick.
In a saucepan, add the garlic and pumpkin, season, and cover with water. Let it cook for about 15 minutes, until the pumpkin is tender.
At this point, we put the pumpkin and garlic, along with some of the cooking liquid, into a blender and blend.
In a bowl, we'll prepare the dough for the fritters. Mix the flour, a pinch of salt, the eggs, and the baking powder, and beat well until you have a smooth mixture.
Add the pureed pumpkin to the batter and continue beating until all the ingredients are combined. Let it rest for 10 minutes.
After this time, and with the help of two spoons, we make balls with the dough to obtain the fritters.
Add the oil to a frying pan and heat it. Fry the fritters until golden brown, without using too high a heat, as they could burn on the outside and remain raw on the inside.
FINISHED DISH:
Let's make a sauce to accompany our fritters: chop a few fresh mint leaves.
In a bowl, add the mint, natural yogurt, and liquid cream and beat well to mix all the ingredients.
We pour the sauce into a container and serve it with our pumpkin fritters.

Miguel Ángel Mateos:
– In this case we have made a yogurt-based sauce, but we can accompany the fritters with a black garlic aioli, a curry sauce,… since they are savory fritters.
– We can substitute the pumpkin with a similar ingredient such as chickpeas, carrots, etc., and change the base flavor of our fritters.
