Black Garlic Banderillas

Ingredients
  • 5 ml of Sherry Vinegar
  • 16 cloves of black garlic
  • 16 Pickled Chillies
  • 2 Carrot
  • 16 Anchovies in Vinegar
  • Pitted Olives
  • Pickles
  • Extra Virgin Olive Oil
  • Sal
Step by step
  1. We peel the cloves of Black Garlic, being careful not to break them too much.

  2. We cut the gherkins into thick slices, about a finger thick.

  3. Peel the carrots and slice them, then cut them into small squares, about the same thickness as the pickles.

  4. In a bowl, pour the sherry vinegar, a drizzle of oil, and a pinch of salt. Add the gherkin and carrot and let it sit for 20 minutes. After this time, drain it.

  5. We remove the filling from the olives and put a clove of black garlic inside.

  6. FINISHED DISH:

    Let's assemble our skewers. First, we'll skewer the olive stuffed with black garlic, then the folded anchovy. Next, we'll add a slice of gherkin and a square of carrot. And finally, another sprig of black garlic.

  7. We'll place each of our Banderillas on a Chili Pepper and that's it!

– We can substitute the Boquerón with salted Anchovy, adding an extra touch of flavor to the Banderilla.

If we don't like the vinegary taste too much, we should leave the gherkin and carrot in it for less time. Or we can dilute the mixture with a little water.
