Let's try a very special recipe… a King Cake with a BIG twist! But don't think it's going to taste like garlic soup, because when it's confited, it loses its spicy flavor and gives the dessert a sweet aroma. We peel the garlic cloves and chop them into small cubes.
We'll start by making a syrup: in a saucepan over low heat, add the sugar, butter, rum, garlic, and citrus peels. Stir until the liquid has a thicker, sauce-like consistency.
At that point, remove from the heat and add the orange blossom water. Let it cool to room temperature.
Meanwhile, in a bowl, add the flour and two eggs and knead the mixture well.
We dissolve the yeast in a little water and add it to the dough, continuing to knead.
We remove the citrus fruits from the syrup we made earlier and add them to the dough. We work the dough well.
mix the dough until it is homogeneous.
We make a ball with the dough and leave it covered at room temperature for 1 hour, to ferment.
After this time, we stretch it out, shaping it into a cylinder, and join the ends to form a ring.
We beat the egg and brush it onto the doughnut so that it gets a golden color in the oven.
We placed the candied fruit and flaked almonds on top.
We moisten the icing sugar with a little water and place it on the ring-shaped cake.
We bake at 175 °C for approximately 25 minutes, with the oven preheated.
We can enjoy it as is, or open it in half and fill it with whipped cream, truffle, or pastry cream.

– When the garlic is confited in syrup, it loses its strong flavor, leaving a pleasant aroma very different from what we are used to.
– We can substitute the water in the syrup with whole milk; this way the Roscón will be more tender and will last longer.
– If we want to make the dough the day before, we can let it ferment in the refrigerator; this way it will last longer.
