Ingredients
  • 2 Purple Garlic cloves / Spring Violet Big Garlic
  • 400 Tudanca beef fillets
  • 4 green asparagus
  • Salt flower
  • 4 Soba noodle packets
  • 1 slice of peeled ginger
  • 100 ml of Teriyaki Sauce
  • Sesame Oil
  • Extra Virgin Olive Oil
  • The green part of 2 fresh spring onions
Step by step
  1. Bring a pot of water to a boil with a little salt, then add the soba noodles. When the noodles are al dente, remove from the heat and drain.

  2. Meanwhile, we will peel a slice of ginger and chop it finely.

  3. We do the same with our garlic cloves. We peel and finely chop them. And we thinly slice the asparagus.

  4. In a wok, add a few drops of sesame oil and a drizzle of olive oil over medium-high heat. Add the ginger, stir-fry, and then add the chopped garlic.

    We let it brown, but not too much, and add the green part of the spring onions and the thinly sliced ​​green asparagus.

  5. We sauté for a few seconds and add the Tudanca beef cut into thin strips.

  6. Once the meat has browned, add the drained soba noodles to the wok. Stir-fry them so they absorb the flavors, then add a generous splash of teriyaki sauce. Let it reduce and the noodles soak up the sauce, then remove from the heat.

  7. FINISHED DISH:

    On a plate, place the pasta in the center, mounding it upwards to create volume. Make sure the vegetables and meat are visible.

The advice of

  • Tudanca beef is a purebred beef from Cantabria, with a particular flavor, but we can substitute it with regular beef or any breed that we like.
  • Soba noodles are a type of Japanese noodle that can now be found in specialty stores and supermarkets. They are usually sold in packages of four servings.
  • We can add the chopped garlic as in this recipe, or we can add the sliced ​​garlic and use it the same way as in the recipe.
  • If we can't find soba noodles, we can substitute them with Chinese rice noodles.
