Peel the garlic cloves and slice them into strips. Then, dice the garlic from those strips. Set aside.
We wash the tomatoes well, cut them in half, and use a paring knife to remove the seeds, trying to get them out whole. We set the seeds aside and cut the rest into small, roughly equal dice.
In a pan with a drizzle of extra virgin olive oil, sauté our wonderful Big Garlic garlic until it is lightly browned and remove it from the heat.
On a round plate, in the center, place the beef fillets, not flat on the plate, but rather layering them to give them some volume. Drizzle the meat with a little of the warmed oil and add the sautéed garlic.
We will place on the Carpaccio fillets, the pine nuts, the black sesame seeds, the diced tomatoes, the diced Parmesan cheese, a little fleur de sel and also, a few arugula leaves, without covering the meat too much.
FINISHED DISH:
We'll finish by drizzling with a spoonful of Worcestershire sauce.
Finally, we will sprinkle some freshly ground peppercorns and place 2 or 3 tomato hearts on each plate.
