Easy
We peel the garlic cloves and chop them finely, cutting them into strips.
In a frying pan with a drizzle of olive oil over medium heat, sauté the garlic. When it starts to brown, add the pine nuts and fresh spinach and sauté everything together.
Stir well until the spinach is cooked, and add the cream along with the butter.
Meanwhile, in a separate saucepan, we will cook the pasta until it is al dente.
Once cooked, drain it and pour it over the mixture in the pan when the cream has reduced and started to thicken.
We sauté the mixture well and remove it from the heat.
(If the cream has reduced too much, we could add a little of the pasta cooking water).
FINISHED DISH:
In a deep plate, typical of pasta, we place our tagliatelle in the center and sprinkle with Parmesan to taste.

– It is important in this recipe that the garlic does not take on too much color, but that it is well sautéed, so that it infuses the whole dish with its pleasant flavor.
– If we wanted to add something extra to this simple and wonderful dish, off the heat, just removed, we would add a free-range egg yolk, and stir it well with the hot pasta, giving it a great flavor and texture.
If we do this over a fire, the yolk will curdle and give a curdled appearance, spoiling the dish and negatively impacting the flavor.
– For the more adventurous and for pasta lovers, I suggest you make your own fresh pasta, which you could flavor with a few drops of garlic oil, with a little spinach puree….
