Finely chop the garlic cloves and gently cook them in a pan with 50g of sugar and 25cl of water. Once they are soft and have turned into a white syrup, remove from the heat and set aside.
In a bowl, add the eggs, milk, butter, the remaining sugar, a pinch of salt, sifted flour, and crumbled yeast.
Using a blender, blend well until you have a smooth mixture. It should be neither too runny nor too thick.
We add our confit garlic syrup to the mixture and stir it well with a spoon. We let it rest for 30 minutes outside the refrigerator.
After that time, we place the pan over medium-high heat, sprinkle a little butter all over the pan and pour round spoonfuls of the mixture, without them sticking together (between 3 and 4 pancakes, depending on the size of the pan).
We let it set on one side, then turn it over with a wooden spatula and remove it. We continue doing this until all the dough is used.

FINISHED DISH:
7. We placed 6 pancakes lengthwise on a flat plate and drizzled them all with a generous amount of honey. We piped a line of whipped cream down the center and decorated with chocolate sprinkles.

– We can substitute honey with maple syrup, strawberry syrup, hot chocolate, it depends on each person's taste and desire.
– It's a way to start the day with a good dose of energy and it can also be a good snack.
– We can make pancakes of small or large diameter.
– If we let the yeast work properly, we'll have really juicy pancakes.
– We can change the flavor and color of the pancakes if we make them with cocoa, coconut, or other ingredients, such as red fruit puree…
