Easy
We peel the cloves of white garlic and chop them finely.
We remove the stems from the strawberries, wash them and cut them into small cubes.
In a saucepan over medium heat, add the sugar and a splash of water. Stir to prevent sticking and wait until it reaches a boil.
At this point, add the garlic and stir well so that it caramelizes. Remove from the heat and let it cool on parchment paper, separating the pieces of garlic so they don't stick together.
Finished dish:
Let's assemble the dessert, and for that, we need a cocktail glass. At the bottom, we place a spoonful of tomato jam, some diced strawberries, and a couple of heaped spoonfuls of yogurt.
We decorate with some currants, a sprig of mint and our caramelized white garlic.

_Miguel Ángel Mateos:
– You can buy the jam at any supermarket or make it at home. Simply heat the sugar and chopped tomatoes over medium heat until it reaches a jam-like consistency, then cool and store in jars.
– It is important that, once we take the caramelized garlic off the heat, we spread it out on baking paper so that it does not stick together and we can then work with it easily.
This is a unique, unconventional dessert that blends sweet and sour flavors with different textures. You'll be surprised!
