Sautéed Rabbit with White Garlic

Ingredients
  • 4 cloves of white garlic
  • 250 g of Rabbit/person
  • 2 Carrot
  • 2 Italian Green Peppers
  • 1 Red Bell Pepper
  • 50 cl of White Wine
  • 1 sprig of fresh parsley
  • Ground Black Pepper
  • Extra Virgin Olive Oil
  • Sal
Step by step
  1. We peel the garlic cloves and chop them into small cubes.

  2. We do the same with the carrot, the green pepper, and the red pepper.

  3. In a frying pan with high sides, and over medium heat, add a generous splash of oil and put in the garlic.

  4. After a few seconds, add the rest of the vegetables, sauté lightly and add the chopped rabbit.

  5. We brown the rabbit pieces on both sides, season with salt and pepper, and add the white wine.

  6. Once the wine has reduced and the rabbit is cooked through and juicy, remove from the heat.

  7. FINISHED DISH:

    On a plate, arrange a bed of sautéed vegetables alongside the garlic sauce, and place the rabbit pieces on top. Garnish with fresh parsley.

_Miguel Ángel Mateos:

– We can add small amounts of aromatic herbs to our stir-fry to enhance its flavor. We can use oregano, rosemary, thyme, etc.

– Also, to enhance the flavor of the dish, we can add a sauté of finely chopped garlic on top of the cooked rabbit.

– For decoration we can replace the sprigs of fresh parsley with toasted almond slivers.
