Easy
We peel the cloves of Black Garlic, being careful not to break them too much and to keep them in their natural shape.
Peel the tomatoes and remove the seeds. Now cut the tomatoes into wedges, like small petals, and set them aside.
To make the Pesto Sauce, place the shelled Sunflower Seeds, Parmesan Cheese, Basil leaves and Sunflower Oil in a blender and blend until you obtain a fine and light paste.
FINISHED DISH:
On a flat plate, place the Burrata Cheese in the center and around it place three tomato petals.
On top of each one we placed a clove of black garlic.
We drizzle the Pesto Sauce we have made over the Burrata Cheese, completely covering its surface.
We place a few basil leaves on top of the cheese, drizzle with olive oil and fleur de sel, and it's ready to enjoy!

– It's a fresh and light dish, very appealing on these summer days.
– We can substitute fresh mozzarella for the Burrata cheese. But we must keep in mind that Burrata is creamier and almost liquid inside.
– Traditional pesto is made with pine nuts, but by substituting sunflower seeds we get a more economical dish.
– To give the Pesto Sauce a greener color, we can blanch the Basil leaves for a few seconds and quickly cool them in ice water.
