Hello! Today we're going to try making a slightly more elaborate and delicious dessert, one that will delight those with a sweet tooth: Ajo Blanco (white garlic soup), orange, and chocolate—three very different flavors that combine perfectly. Don't believe it? You just have to try it!

We peel the garlic and chop it very finely, almost until it is crushed.
In a saucepan over medium heat, add about two fingers' worth of water and place another saucepan or metal bowl inside. This will allow you to melt the chocolate using a double boiler. Add the chocolate pieces and stir until completely melted.
We fill the semi-sphere-shaped silicone mold with the chocolate, moving it around to make sure that all the walls are well coated.
We place the mold upside down over the saucepan or metal bowl so that the excess chocolate drains out. This will give us a chocolate dome with thin walls. We let it cool and unmold it very carefully.
In another saucepan over medium heat, add the garlic, 50g of sugar, and the cream. Wait until the sugar dissolves, the garlic softens, and the cream thickens, then remove from the heat.
We pour the mixture into the siphon, close it, and let it cool. Then, we shake it several times as if it were a cocktail shaker and set it aside to cool.
In a saucepan over medium heat, add the orange juice and 50g of sugar, letting it cook for approximately 10 minutes until it reaches a syrup-like texture.
FINISHED DISH:
We fill the Chocolate Dome with the Garlic Mousse, turn it over and place it in the middle of a flat plate, preferably white so that the dessert stands out.
We drizzled the warm orange sauce over the dome and decorated it with the edible flowers.

-If you don't have a siphon to quickly make the garlic mousse, you can whip the cream with the sugar and finely chopped garlic that has been cooked in syrup. The final texture won't be the same, but it's a good substitute for using a siphon.
– We can use different sauces instead of orange, such as mango, passion fruit, raspberry…
– We can also make the dome out of white chocolate, changing the flavor of the dish depending on which chocolate we like best.
– A striking and very beautiful detail is to paint the Dome with a brush and edible gold dust.
