Ingredients
  • 6 cloves of black garlic
  • 50 grams of Egg Spun
  • 250 grams of gnocchi
  • 125 grams of Ricotta Cheese
  • 150 ml of cooking cream
  • 25 grams of butter
  • 1 teaspoon of sesame with wasabi
  • Sal
Step by step
  1. We peel the black garlic and chop it finely.

  2. In a saucepan over medium-high heat, add water and bring it to a boil. Once boiling, add the gnocchi, along with a pinch of salt, and reduce the heat slightly. Once the pasta has risen to the surface, drain it and set it aside.

  3. In a frying pan over medium heat, add the butter and wait for it to melt.

  4. Add the cheese, cream, and garlic, and stir to mix everything well.

  5. Add the gnocchi and mix. Remove the pan from the heat to keep it warm and allow the flavors to meld, but don't let the ingredients burn.

  6. FINISHED DISH:

    In the center of the plate we place the Gnocchi with the sauce and on top of it we scatter a few Wasabi Sesame seeds and add the Spun Egg.

  7. We place two or three cloves of black garlic around it and that's it!

The advice of

Wasabi-flavored sesame seeds are sold in specialty Asian food stores or supermarkets. They are seeds with a very mild wasabi flavor, not very spicy, and are distinguished by their green color.
– If we chop the Black Garlic too much, it will change the color of our sauce, making it darker.
– We can use another variety of cheese according to our taste, for example Parmesan, Gorgonzola,…
– If the ricotta cheese is overheated, the sauce will have a curdled appearance, as it will separate into small granules, resulting in a less visually appealing dish. Therefore, this step should be done over medium heat and just long enough for the sauce to thicken and heat through.
– As we mentioned, we'll know the gnocchi are ready once they float to the surface of the water. Until then, they'll stay at the bottom of the pot.
