Ingredients
  • 4 cloves of black garlic / person
  • 4 Artichokes / person
  • 2 eggs / person
  • Sal
  • Extra virgin olive oil
  • Lemon drops
Step by step
  1. We peel the garlic cloves and chop them finely.

  2. We peel the artichokes, removing the greenest leaves, until we reach the inner ones, which will be more yellowish.

    We clean the stem without cutting it excessively, we just peel it and cut off the greenest part and keep the most tender part.

    We place them in a bowl of water with a few drops of lemon juice, so that the artichokes do not oxidize.

  3. We slice them lengthwise, as thinly as possible, and sauté them in a pan with a drizzle of olive oil over medium heat. When they begin to brown, we add our chopped black garlic, sauté for a few seconds, and turn off the heat.

  4. In a bowl, beat two eggs per person, season lightly and add our mixture of black garlic and sautéed artichokes, cooled to room temperature, so that the egg doesn't overcook.

  5. In a small tortilla pan, add a few drops of olive oil, heat it, and pour in the mixture. Stir vigorously, gather the edges of the tortilla, and reduce the heat. Flip the tortilla over and use a spatula to gather the edges so it's nice and compact and round.

  6. FINISHED DISH:

    On a flat plate of our choice, we will place our tortilla, some slices of rustic bread and some crispy artichoke "chips".

The advice of

– A good white garlic aioli or black garlic aioli goes very well with the tortilla.
– It's a base. We can make our black garlic omelet with different fresh vegetables, such as white or green asparagus, zucchini, tomato, onion, and fresh cilantro…
– The flavor that black garlic provides is truly wonderful, as it adds garlic aromas, but very mild and sweet, which combines very well with the egg and the sautéed artichokes.
– If we don't want to use lemon juice, so as not to change the flavor of the artichokes, we can add a tablespoon of flour to the bowl of water where the artichokes will go, or if we are very quick, sauté them directly, without rinsing them, cut and sauté.
