Fake Garlic Buds with Mannitol

Ingredients
  • 4 Big Garlic Purple Garlic cloves
  • 200 ml of cooking cream
  • 15 grams of Carrot
  • 15 grams of zucchini
  • 10 grams of onion
  • 80 grams of Rye Bread (or similar)
  • 100 grams of Mannitol powder
  • 16 blackberries
  • 8 fresh cilantro leaves
  • 2 Edible flowers
  • Salt (to taste)
  • Extra Virgin Olive Oil (amount to taste)
  • Ground Black Pepper
Step by step
  1. We peel the garlic cloves and slice them as thinly as possible.

  2. We poach them over low heat with a drizzle of oil, without letting them brown.

  3. Add the cream, a pinch of salt and a pinch of pepper and leave over medium heat, stirring slowly, until the cream thickens.

    Remove from heat, blend with a blender and let it cool.

  4. Once it's cold, we'll put it in a piping bag without a nozzle or we'll use two coffee spoons.

  5. We place cling film on the board and cut it into rectangles. We place a teaspoon of our cream on each rectangle of cling film and wrap it up, shaping it like a clove of garlic. We'll make 3 per person.

    We'll put them in the freezer for 2 hours.

  6. After this time, place the mannitol powder in a saucepan over medium heat and wait until it becomes liquid and clear. At this point, be very careful and remove it from the heat, as it has already reached a high temperature.

  7. We took our egg yolks out of the freezer three at a time, removed the cling film that wrapped them and, with the help of a needle, pricked them and submerged them in the mannitol, slowly removing them.

    We repeat this process twice and carefully place them on a piece of baking paper, as a crispy, hard layer has already formed on the outside, but the inside is creamy and fragile.

    Before removing the needle, we will blow on it well to cool it down.

  8. We repeat this process with the other egg yolks and set them aside.

  9. Meanwhile, we put the onion, carrot and zucchini, cut as finely as possible, over medium heat and leave until they are soft, but without taking on color.

  10. We add a finely chopped clove of garlic, sauté everything lightly, and also add the bread cut into small cubes and turn up the heat.

  11. We sauté everything, add fine salt and pepper to taste and remove from the heat.

  12. FINISHED DISH:

    In a small plate or bowl, place a base of our previous stir-fry (steps 9, 10 and 11) and on top of this, still warm, place four small blackberries, three garlic buds (as if they were coming out of the ground) and decorate with the edible petals.

  13. We placed Maldon salt on each egg yolk.

You have to be extremely careful with hot mannitol, because if it gets on your skin, it can cause serious harm. It cools and solidifies very quickly, so it burns like a drop of molten plastic on your skin.

Once the mannitol residue in the pan has cooled, it will become very hard. To clean it, use hot water or reheat it on the stove until it separates from the bottom.

For the preparation of the recipe, we can use different creams and pralines, such as Idiazabal cheese cream or hazelnut praline.
